4 yellowtail fillets
1 tablespoon salad oil
2 tablespoons soy sauce
2 tablespoons sugar, sweet sake for seasoning (mirin) or honey
2 tablespoons sake or water
Make the teriyaki sauce in a bowl.
Heat the oil over a medium flame and sear each side of the yellowtail for about 2 minutes.
Reduce to a low flame, and add the teriyaki sauce. Simmer both sides for about 2 minutes.
