Double Baked Sweet Potato

1 sweet potato
10g butter or margarine
20g sugar
20g milk
egg yolk (for glazing)

Peel and cut the sweet potato and soak in water for about 3 minutes and then microwave it in a microwaveable dish until soft.
Mash the potato and add the butter, sugar and salt while it is still hot. Add in some milk in order to give the mash a firm but pliable texture. Mould into sweet potato shapes. This should make about 2-3 shapes depending on the size of the potato used.
Put the potato on to some parchment paper and glaze with the slightly beaten egg yolk. Bake in the oven for about 10 minutes at 180c, depending on the type of oven, adjust cooking time accordingly.
