Ingredients
One bowl of Chinese noodles
300g (1.5 cups) of bonito stock
27g (1.5 tablespoons) of light soy sauce
9g (1/2 tablespoons) of mirin
One piece of grated ginger
Tempura scraps as needed
Chopped green onions as needed
<Option>
Raw egg, fried tofu, or tempura
Instructions
Combine bonito stock, light soy sauce, mirin, and grated ginger and bring to a boil.
Boil the Chinese noodles, rinse with cold water, put in a bowl, and pour over 1. Top with tempura scraps and chopped green onions.
